Your First Brew: A Simple Overview
Kombucha brewing happens in two stages, and both are wonderfully simple once you get the hang of it.
First Fermentation (F1)
This is where the magic begins. You'll brew a batch of sweetened tea, let it cool, then add your SCOBY and some starter liquid. Cover your vessel with a breathable cloth and let it ferment at room temperature for 7–14 days. The SCOBY feeds on the sugar, producing organic acids and a tiny bit of natural fizz.

- Duration: 7–14 days depending on your taste preference
- The longer it ferments, the more tart and less sweet it becomes
Second Fermentation (F2)
This is where you get creative! Once your F1 kombucha tastes good to you, bottle it up with a little fruit juice, ginger, or berries to develop carbonation and extra flavour. Seal the bottles and leave them at room temperature for 2–3 days, then refrigerate. The result? A beautifully fizzy, flavoured kombucha that's uniquely yours.
Tips for a Happy Brew
- Keep it warm. Kombucha ferments best between 24–28°C. If your kitchen is cooler, our Fermenting Jacket is a great way to keep your brew at the right temperature year-round.
- Avoid direct sunlight. Store your brewing vessel in a warm, dark spot away from direct sun.
- Be patient with F2 carbonation. Do a gentle "burp test" on your bottles daily — press the side of a plastic bottle or carefully crack a flip-top to check the pressure.
- Keep it clean. Cleanliness is everything in fermentation. Rinse all equipment thoroughly before each brew.
- Taste as you go. Your palate is your best guide. Start tasting from day 7 and bottle when it's just right for you.
